Quick and easy: Dorm room recipes

Nearly every health expert touts the virtues of eating a balanced breakfast. Daphne Oz, daughter of Dr. Mehmet Oz (yes, that Dr. Oz) in her book, “The Dorm Room Diet” says that eating breakfast revs up the metabolism after a long night without food. Skipping breakfast could cause the body to go into starvation mode, which actually slows down metabolism. When metabolism slows down, the possibility of weight gain increases immensely.

So, what is a busy student to do when they have 10 minutes to get to class and do not have time to stop at Washakie Center to eat? Grab a bag of this super delicious, on the go breakfast. Each batch makes four servings and takes about six minutes (15, counting the cool down period that is highly recommended) to throw together.

 

Breakfast Trail Mix

¼ cup butter or margarine (I recommend butter because margarine is loaded with transfats and has a high water content that will only make the cereal soggy)

2 tablespoons sugar

1 teaspoon ground cinnamon

3 cups of bite size cereal like Chex (I used a combination of Rice Chex and Corn Chex because that is what I had on hand)

¼ cup slivered almonds (If you have a nut allergy, these can be eliminated)

¾ cup raisins (I substituted dried cranberries because I hate raisins)

Melt butter in a large microwave-safe bowl. Stir in sugar and cinnamon. Add the cereal and nuts and stir to coat.

Microwave for two minutes. Stir and then microwave on two minutes again.

Add the raisins and microwave for another 2 minutes.

Spread over a layer of paper towels and let it cool. The mix will crisp up as it cools.

Store in airtight container.
