Whether going to work or heading out to class, grabbing something quick and easy is sometimes the only option people have.
When simply taking the time to breathe is a challenge, freezer cases full of frozen dinners and shelves lined with single serving containers of macaroni and cheese, chili and soup encourage shoppers to just grab and go.
With a little forward thinking, those little containers of conveniently pre-cooked foods can be turned into a meal worth talking about.
Broccoli and Sausage Macaroni: Makes roughly 6 servings
One 12 oz package frozen broccoli
Two 14 oz containers prepared macaroni and cheese
7 oz smoked turkey or Polish sausage cut into ½ inch pieces
1 tbsp butter
1/3 cup crushed Ritz crackers
Cook broccoli according to package directions and drain.
Stir into macaroni and cheese and sausage and microwave on high for 6 to 8 minutes or until heated through. Stir once or twice during cooking.
Melt butter in a microwave safe bowl and stir in crushed crackers. Sprinkle this on top of the macaroni and cheese.
Microwave on high for one or two minutes.
