This week I am all about simple because, like the rest of my fellow students, I have finals to think about.
I am also thinking comfort food as the stress of tests, 20 page papers and final projects leaves me wanting something warm and tasty and maybe a little fruity.
My mom used to make this oven-baked peach cobbler. It is super simple and only takes three ingredients, four if you add the nuts. I thought I would try it in the microwave and see what results I ended up with.
I could not have been happier. It was tasty, warm and just a little fruity—everything I was hoping it would be. I recommend serving it with an extra large scoop of vanilla ice cream to create the perfect creamy, comforting treat.
Peach Cobbler
Servings 4 (or 1 or 2, depending on how much comfort you need)
1 can of sliced peaches (get the peaches that are packed in their own juice)
1/2 of a yellow cake mix (or one box of Jiffy yellow cake mix)
1/4 cup of butter, melted (by now, you should know I am Paula Dean’s clone)
1/2 cup chopped pecans (these are really expensive right now, so don’t use them if money is tight)
As usual, grab a microwave safe dish. Drain the peaches and dump them in the dish.
Sprinkle the dry cake mix over the peaches.
Pour the butter over the cake mix and if you are using the nuts sprinkle them over the top.
Toss it in the microwave for 12 minutes on high and that is all. Easy as pie.
